MANUFACTURING PROCESS OF DAHI:-

Receiving milk:

Fresh and clean good quality milk is received.

Heating:

Milk is heated in multipurpose vat with constant stirring.it is heated up to boiled.

Cooling:

It is cooled at room temperature in summer season and 400-42 0C in winter.

Inoculation:

The addition of starter culture to milk is called inoculation.1 to 3 % lactic starter culture is added.

Incubation:

Milk is kept at room temperature for 8+12 hrs., in a container and is allowed to set .

Packaging:

The containers are packed and stamped with manufacturing date, batch number and price.

Cooling and storage:

Packed containers are cooled and stored low temperature to avoid increasing of acidity.
